An open-base work table is a stainless prep table whose legs are left open underneath — no undershelf or cabinet — so the floor beneath sweeps and mops clean in seconds and air circulates to keep the area dry. It is the most sanitary base style and the one health inspectors prefer, because there is nowhere for debris or standing water to collect. Open-base tables also leave full clearance for a trash can, ingredient bins, or a rolling rack to tuck under the top. Choose an open base for wet stations, dish areas, and anywhere frequent floor cleaning matters more than under-table storage; add an undershelf model instead when you need the extra landing space.
