It is rigid enough to resist denting and flexing under heavy cutting boards, mixers, and repeated impact, yet noticeably less expensive than 14-gauge, which is reserved for the heaviest chopping and mounted equipment. For most restaurants, a 16-gauge top hits the sweet spot of durability and cost; 18-gauge is thinner and better kept to light-duty, low-traffic, or budget stations. If the table will carry vibrating countertop equipment or take a beating on a busy line, 16-gauge (or heavier) is the right call — and pairing it with 304 stainless adds corrosion resistance near sinks and acidic foods.
