Commercial Commercial Steamer: Not Heating — Causes & Fixes

1. Remove all food and pans. Turn the steamer OFF and open the door(s); the automatic three-minute blowdown cycle runs to drain and rinse the generator.
2. Turn the steamer ON so the generator begins to refill, then set the switch to the position the manual specifies for your model (TIMED or OFF).
3. Add the approved DISSOLVE descaler through the descale port during refilling, then add 1–2 gallons of cold tap water until the solution rises through the steam nozzles into the cooking compartment.
4. Let the descaling solution sit in the generator for about one hour.
5. Turn the steamer OFF to run a three-minute blowdown, letting the generator rinse and drain; let it refill and add cold tap water again until it reaches the steam nozzles, then run another blowdown.
6. Run the steamer about 20 minutes, then run a final blowdown to flush; confirm no descaler remains before cooking.
7. Reset the DESCALE REQUIRED light. If steam is still weak or the descale light returns, have a technician descale the generator — do not open the boiler.
8. Fix the root cause: if scale recurs quickly, treat the water (filtration/softening).

1. Turn the power off and wait about five minutes for the generator to drain completely; turn the cooking timers to OFF.
2. Prepare the deliming solution according to the instructions on the deliming material package (the manual does not specify a brand — follow the product's directions).
3. Remove the delime port cap on top of the unit, insert a funnel, and pour the deliming solution slowly into the steam generator to avoid spillage.
4. Remove the funnel and rinse the port with clean water; lightly coat the delime port threads with Petrol-Gel and reinstall the cap.
5. Power on and, once the ready light appears, allow about 40 minutes of operation; after 20 minutes turn the cooking timers on for one minute to delime the steam tubes and nozzles.
6. Do not skip the rinse — flush per the manual so no deliming solution remains before cooking. Deliming does not replace a water-treatment program.
7. If scale persists or the generator is heavily limed, have a technician service it — do not open the generator.

1. Cool and drain the unit. Add 1 cup (8 oz) of white vinegar to the cooking chamber, then pour in about 2-1/2 gallons of tap water (connectionless models).
2. Run Cook mode for 15 minutes; time it manually because the steamer won't shut off automatically.
3. Let the unit cool for 30+ minutes, then drain it completely.
4. Rinse: repeat the water fill and a 15-minute cook cycle without vinegar, then drain completely so no descaler remains.
5. While maintaining, clean the water-level sensor probes with a non-metallic pad to remove mineral film, and confirm the overfill sensor is reinstalled — the unit won't operate without it.
6. Do not use a water jet or pressure washer — it can damage the machine.
7. Descale weekly (or more often on hard water) and treat the water if scale recurs quickly.

1. Let the unit fully cool and switch it off. Wash the gasket and door sealing face with a cloth in mild detergent and warm water — baked-on grease alone can break the seal.
2. Inspect the gasket for cracks, splits, hardening, or debris. If it's damaged, replace it with the correct gasket for your model.
3. Run the dollar-bill test: close the door on a slip of paper and pull — it should drag. Do this at several points around the door.
4. If the seal is weak and the gasket is good, on boilerless units retighten the hinge screws per the manual and re-test.
5. If it still won't seal, or the sealing surface/latch is worn (connected/boiler units especially), have an authorized technician adjust or replace the door hardware.
6. Leave the door slightly open when the steamer is not in use to air the gasket and chamber.

1. Cool and drain the unit. Remove and clean the compartment drain screen of food and grease, and clear the drain outlet.
2. Confirm the drain line runs to an open, air-gapped floor drain and isn't kinked; inspect the drain daily.
3. On models with an overflow pipe, confirm it is clear before operating — a clogged overflow can force too much hot water into the compartment (burn hazard).
4. On connected models, clean the water-supply inlet strainer and replace the external filter cartridge per the filter maker's schedule.
5. If water still won't drain or the unit pools water after cleaning, check that the unit is level; if it persists, call a technician (fill solenoid, level control, or inlet valve screen).
