General safety
- Ice is a food under FDA rules - discard all ice after any repair, contamination, mold, or extended downtime, and produce ice only with safe water and sanitary, cleaned equipment.
- Use only an approved nickel-safe ice machine cleaner. Never use bleach or chlorine-based solutions, nor nitric, sulfuric, hydrochloric, carbolic, or acetic acid, non-food-grade vinegar, or salts - these damage the machine and can void the warranty (Ice-O-Matic).
- Never mix ice machine cleaner and sanitizer together (Manitowoc).
- Do not exceed the labeled cleaner concentration and do not soak parts longer than the manual allows (Follett: no more than 45 minutes to avoid pitting).
- Disconnect electrical power and shut off the water supply before servicing internal components or working near the condenser fan.
- Refrigerant, sealed-system, and internal electrical repairs must be performed by an EPA Section 608 certified technician - never open the refrigerant circuit yourself.
- Wear rubber gloves and eye protection when handling acids and sanitizers, and ventilate the area.
