General safety
- Disconnect power before cleaning or servicing - unplug the cabinet, or switch off and lock out/tag out the circuit. OSHA's Control of Hazardous Energy standard (29 CFR 1910.147) covers thermal and electrical energy during servicing and maintenance so equipment cannot be unexpectedly energized. Metro: 'Unplug the cabinet before cleaning or servicing.'
- Do not wash the cabinet with a water jet or high-pressure water, and do not spray or pour water into the control enclosure (Metro) - water in the controls creates a shock and short-circuit hazard.
- Only factory-approved / qualified service agents should service, repair, or replace electrical components, wiring, or the power cord (Metro). Leave heating elements, thermostats, high-limit/thermal cut-outs, control boards, and water-reservoir wiring to a technician.
- Heated cabinets, pans, and interior surfaces stay hot - use dry mitts and let the unit cool before cleaning. OSHA notes kitchen equipment hot surfaces can cause burns and requires workers to be protected from heated surfaces.
- If you experience an electrical shock from the cabinet, immediately shut off power and call a trained servicer (Winston). Stop using any unit with a damaged cord or plug - do not tape or splice it.
- Clean the equipment daily to prevent buildup of food residue or chlorides, which can also damage stainless steel (Winston). Never use chloride-based cleansers, wire brushes, or steel wool on interior surfaces.
- On humidified cabinets, wipe up water that drips from the doors promptly - it is a slip hazard (Metro).
- Follow food-safety rules on the product: hold hot TCS food at 135°F (57°C) or above, and reheat-or-discard any TCS food that has fallen below 135°F per FDA Food Code 3-501.16.
