The inspector measured a refrigerated TCS (potentially hazardous) food such as cut lettuce, cooked pasta, deli meat, or dairy sitting above 41°F. Common spots are overstuffed prep-table rails, walk-in shelves near the door, and salad bars.
Why it matters
Between 41°F and 135°F bacteria like Salmonella and Listeria multiply rapidly, so cold food that drifts warm can grow enough pathogens to make people sick.
How to fix it now
Rapidly cool product back to 41°F or lower (ice bath or blast chiller), and discard any TCS food that has been above 41°F for more than 4 hours.
How to prevent it
Don't overfill prep rails above the fill line, pre-chill inserts, check unit temps at least twice a shift with a calibrated thermometer, and log them.
