Commercial Sandwich & Salad Prep Table: Ice — Causes & Fixes

Check in this order (5-minute diagnostic)
Work top to bottom — the quickest, most-likely checks are first.
- Door / lid not sealing or left open (warm humid air infiltration). Inspect gaskets and confirm doors, drawers, and rail lids close fully. Beverage-Air ties a 'Hi' (too warm) and 'dOr' (door open) message to doors/drawers not closed; MaxxCold notes continuous opening prevents the unit from maintaining temperature.
- Dirty condenser causing over-run and frosting. A matted condenser makes the system run continuously and frost heavily. Beverage-Air and Continental both link a dirty condenser to over-running and high temperatures.
- Defrost cycle not completing / defrost fault. Heavy ice that returns after a manual defrost. Beverage-Air: the unit 'will automatically defrost as needed'; MaxxCold defrosts about every 6 hours until the coil clears or 20 minutes pass. A defrost that never clears the coil is a fault.
- Blocked airflow forcing the coil to freeze. Product packed over the air outlet or against the back wall. MaxxCold: obstructions 'can cause evaporator coil freeze ups.'
Likely causes, checks & fixes
| Likely cause | How to check | What to do | Who |
|---|---|---|---|
| Door / lid not sealing or left open (warm humid air infiltration) | Inspect gaskets and confirm doors, drawers, and rail lids close fully. Beverage-Air ties a 'Hi' (too warm) and 'dOr' (door open) message to doors/drawers not closed; MaxxCold notes continuous opening prevents the unit from maintaining temperature. | Clean/replace the gasket, correct alignment, and keep doors and lids closed. Replace a faulty door switch if the door-open message persists with the door shut. | DIY-safe |
| Dirty condenser causing over-run and frosting | A matted condenser makes the system run continuously and frost heavily. Beverage-Air and Continental both link a dirty condenser to over-running and high temperatures. | Disconnect power and clean the condenser coil (see maintenance). | DIY-safe |
| Defrost cycle not completing / defrost fault | Heavy ice that returns after a manual defrost. Beverage-Air: the unit 'will automatically defrost as needed'; MaxxCold defrosts about every 6 hours until the coil clears or 20 minutes pass. A defrost that never clears the coil is a fault. | Run a full manual defrost (many controllers have a defrost/'melting snowflake' button; or power off with doors/lids open until ice is gone). If the defrost alarm or ice persists, have a technician check the defrost timer, heater, and termination sensor. | Basic |
| Blocked airflow forcing the coil to freeze | Product packed over the air outlet or against the back wall. MaxxCold: obstructions 'can cause evaporator coil freeze ups.' | Keep product clear of the evaporator and air ducts so conditioned air can circulate. | DIY-safe |

How to do the safe fixes
Owner-doable procedures only. Anything on the "Technician" list above needs a licensed pro.
Clean the condenser coil DIY-safe
- Disconnect power to the unit (unplug it or switch off and lock out the breaker).
- Remove the grille or access panel covering the condenser (front grille on most prep tables; on some Beverage-Air styles lower the rear panel—note the cord stays connected).
- Examine the coil; brush dust and lint from the fins, brushing in the direction of the fins (up and down) to avoid bending them.
- Vacuum the loosened debris; for heavy buildup blow the coil clear with compressed air (wear eye protection). For a greasy coil, use a refrigeration coil cleaner—or leave a heavily greased coil to a technician.
- Do not install filter material in front of the coil (it blocks airflow like a dirty coil). Reinstall the grille/panel and screws.
- Restore power and confirm the compressor and condenser fan run.
- Wear gloves—condenser fins are thin metal with sharp edges.

Set up the rail so top pans hold 41°F or below (don't overfill / keep lids on) DIY-safe
- Pre-chill all product to 41°F or below in the base cabinet or a reach-in before it goes in the rail—the rail holds cold product, it does not chill warm product.
- Fill each pan only to the rail (fill) line; never mound product above the top of the well, which lifts it out of the cold-air zone.
- Put a pan in every opening (keep empty pans in place) and keep the false-bottom panels and baffles installed.
- Close the insulated lid/covers whenever pans are not in active use, and overnight.
- Verify with a probe thermometer that product is at 41°F or below; do not rely on the cabinet display.
- Do not use the top rail for overnight product storage—move product to the base cabinet or a reach-in at close.

Run a manual defrost on an iced-up unit DIY-safe
- Move all product to another working cooler so it stays at or below 41°F.
- If the controller has a defrost/'melting snowflake' button, press and release it (Beverage-Air: holding it too long shuts the controller off); otherwise switch the unit off and prop doors/lids open.
- Let all frost/ice melt naturally—never chip ice off the evaporator with a sharp tool, which can puncture the coil.
- Mop up melt water and confirm the condensate drain is clear.
- Restore normal operation, let the unit return to setpoint, then reload pre-chilled product.
- If heavy frost returns quickly, the door/lid seal or the defrost system needs attention.

Clear a clogged condensate drain and clean the pan DIY-safe
- Disconnect power to the unit.
- Locate the evaporator/condensate drain pan and the drain tube; confirm the tube runs from the evaporator housing into the pan.
- Remove food debris and standing water and wash the pan with warm water.
- Flush the drain line to clear any blockage so defrost water routes out (do not force rigid objects that could damage the line).
- Confirm the cabinet is level, or pitched slightly back, so water drains toward the pan, then restore power.
- If a heavy load keeps overflowing the self-evaporating pan, the drain can be diverted to a floor drain or an electric condensate heater added (technician/accessory).

Clean or replace a door/lid gasket DIY-safe
- Clean the gasket with warm soapy water; avoid full-strength cleaners that make it brittle and never scrape it with a knife or sharp tool.
- Inspect for tears, hardening, or gaps that break the seal; do a paper/dollar-bill drag test at several points.
- To replace a 'Dart'-style gasket, grasp a corner and pull it out of the groove in the door.
- Clean the groove, then press the new gasket into place by hand (no tools required), seating the corners first and working around.
- Close the door/lid and confirm an even seal all around; adjust hinges if the door sags.

Verify the setpoint and read food temperature correctly DIY-safe
- Prep tables are typically factory-set around 38°F; the cabinet display reads cabinet air, not product temperature.
- Place a calibrated probe thermometer in the food to confirm both rail and base product are at 41°F or below.
- If adjustment is needed, change the control in small steps (Continental: turn the thermostat no more than 1/4 turn at a time), then allow time to recover before adjusting again.
- If the unit was unplugged or switched off, wait about 5 minutes before restarting so the system can equalize.
- If it will not hold within range with a clean coil, good seals, and correct loading, have a technician test the control/sensor.

- A breaker that trips again after you reset it once — stop, disconnect the unit, and call an electrician or refrigeration technician.
- You smell gas, see refrigerant/oil leaking, or the repair needs the sealed system, gas train, or high-voltage wiring.

Frequently asked questions
Why is my sandwich & salad prep table ice?
Frost buildup usually comes from warm humid air getting in (a door/lid left open or a bad gasket), a dirty condenser forcing the unit to over-run, or a defrost-cycle problem. Most prep tables defrost automatically, so persistent ice points at air infiltration or a defrost fault.
Is it worth repairing or replacing?
Simple fixes (gaskets, coil cleaning, a single part) are worth repairing. Consider replacing when it needs a compressor or sealed-system repair and is 8–10+ years old, or when repeat service calls near the price of a new unit.
