General safety
- Hot oil causes severe burns — always wear oil-resistant gloves when working near or with hot oil, keep water and wet product away from the frypot, and never move a fryer containing hot oil.
- Never put water on an oil/grease fire. Keep a Class K fire extinguisher within 30 feet of the fryer (NFPA 10) as backup to the hood's automatic fire-suppression system.
- Commercial fryers that produce grease-laden vapors must operate under a listed exhaust hood with an automatic fire-suppression system, and the hood/ducts must be cleaned on schedule (NFPA 96).
- Anything involving the gas valve, gas pressure, pilot/thermocouple, burners, ignition module, high-limit, or electrical wiring is for a qualified/factory-authorized service technician — do not disassemble, adjust, or bypass these parts.
- If you smell gas, shut off the manual gas valve, ventilate the area, and do not operate any electrical switches; call your gas supplier or a qualified technician.
- Before moving a fryer for cleaning or service, turn off the gas supply and unplug the unit (or switch off its circuit breaker) to avoid fire, explosion, or electric shock.
- Do not scrape gas burner tubes or electric heating elements when cleaning the frypot.
- Discard degraded oil promptly — with prolonged use its flash point drops, increasing fire risk. Keep oil at the fill line and lower the temperature (about 275°F) when idle.
