Preventive maintenance schedule
| Task | How often | How | Who |
|---|---|---|---|
| Run the automatic clean cycle | Daily to per-shift, per soil level | Select the appropriate cleaning level on the control (rinse/light/normal/heavy), add the manufacturer's cleaner tabs or spray as prompted, confirm the water is on, and start. Leave the door slightly ajar after the cycle. Racks and shelves can stay in during cleaning on most models. | DIY-safe |
| Descale / delime the steam generator | Every 1–2 weeks to monthly, per water hardness and hours of use | Run the built-in descale/delime program with only the manufacturer-approved descaler on an empty oven, then run the flush/rinse step. Never use an unapproved acid or attempt to open the boiler. | Basic |
| Replace the external water filter | Every 3–6 months (per usage/water); descale generators every 6–12 months | Replace the water-filter cartridge on schedule to protect the boiler and valves; the control may prompt when it's due. Water quality/treatment is the owner's responsibility and out-of-spec water voids warranty. | Basic |
| Clean the air intake / fan grille | Regularly (and any time an electronics-temperature code appears) | Clean the fan grille at the bottom of the unit and the air intake at the base so the electronics stay cool; a blocked intake causes high-temperature faults and can shut down heating. | DIY-safe |
| Clean the control / air filter behind the fan guard | Weekly | Pull and wash the control filter with soap and water and reinstall; on models with an internal filter, loosen the fan-guard screws, spray with the approved cleaner, and run a short steam cycle per the manual. (Excludes mini combi models.) | DIY-safe |
| Clean and inspect the door gasket | Daily clean; inspect regularly | Wipe the gasket and door face clean (no abrasives) so it seals; inspect for hardening, tears, or corner gaps and replace when it no longer seals. | DIY-safe |
| Clean and clear the chamber drain | Daily | Clean the chamber drain and drain screen/trap of grease and debris and confirm the drain line runs to an open, air-gapped floor drain so water doesn't back up. | DIY-safe |
| Verify water quality / treatment | At install and periodically | Have incoming water tested against the manufacturer's water-quality spec and provide treatment (carbon-block filtration, softening, or reverse osmosis) as required. This is the #1 preventive against scale, corrosion, and premature boiler/element failure. | Basic |
General safety
- Combi ovens produce large volumes of hot steam — open the door slowly and stand back to let steam vent before reaching in, and wear heat-resistant gloves; steam burns are severe.
- Cleaner tabs, spray cleaners, descaler, and rinse-aid are caustic/corrosive. Wear gloves and eye protection, keep them off skin and food-contact surfaces, run cleaning/descale cycles only on an empty oven, and never open the door mid-cycle while chemicals are circulating.
- Never mix cleaning and descaling chemicals, and use only the manufacturer-approved products — unapproved acids or oven cleaners can damage the boiler and void the warranty.
- Anything involving the boiler/steam generator, gas supply or burner, high-voltage heating elements/contactors, water solenoid valves, temperature sensors, or the control electronics is for a qualified/authorized service technician — do not open, bypass, or bridge these components.
- If you smell gas near a gas combi, shut off the manual gas valve, ventilate, don't operate electrical switches, and call a qualified technician or the gas supplier.
- Before cleaning behind panels, replacing a gasket, or servicing, turn the oven off, shut off the water, and disconnect power (or switch off the breaker); on gas units shut off the gas.
- Water quality is the owner's responsibility — running a combi on untreated hard water causes scale, corrosion, and premature failure and can void the warranty; provide the manufacturer-specified filtration/treatment.
- Clean up water leaks promptly to avoid slips, and keep the floor drain clear and air-gapped per plumbing code.
