A refrigerated prep table is a workhorse: chilled ingredient pans on top for building to order, a cutting board across the front, and refrigerated storage below. The trick is that "prep table" covers three distinct designs — standard sandwich, mega top, and pizza prep — and they are built around different pan sizes and cutting boards. Pick the one that matches how you actually build your product.

The mega top trades cutting-board depth for a third stagger of pans, so you get far more cold ingredients on the rail. Pizza prep tables use bigger pans because you move sauce and cheese by the cup, not the spoonful, and the board is deep enough to spin a large pie.

How to decide: standard vs. mega top

Two questions settle it:

  • Do you run more than about 12 cold ingredients on the line? If yes, lean mega top.
  • Is your bread shorter than about 12 inches? A mega top's shallower board handles short bread and rolls fine; long sub rolls want the deeper standard board.

Yes to both points to a mega top. No to either points to a standard top. And if you build pizzas, skip both and get a dedicated pizza prep table — the 1/3 pans and pie-sized board are purpose-built and you will fight a sandwich table forever.

Sizing by pan count and length

Prep tables are commonly sold by width and pan count. Typical footprints run from about 27 inches up to 72 inches:

  • 27" (1 door, ~8–12 pans): food trucks, tight cafes, low volume.
  • 48" (2 door, ~12–18 pans): the popular middle for most delis and sandwich shops.
  • 60–72" (2–3 door, up to ~30 pans): high-volume lines and pizzerias.

Count the distinct cold ingredients your menu needs on the line, then buy enough pan slots to hold them plus a couple spare. Undersizing forces you to swap pans mid-rush; oversizing wastes floor space and energy.

Pans in the rail are chilled from below and by the cold air around them, not deeply refrigerated — keep the lids on during slow periods and do not overfill above the pan line, or the top of the product drifts warm. The base cabinet below holds bulk product at proper refrigeration temperature.

  • Cutting board: poly boards wear out — make sure replacements are a standard size and easy to source.
  • Door vs. drawer base: drawers speed access to backup pans; doors hold more bulk.
  • Compressor placement: side-mount runs cooler in hot kitchens; rear-mount saves a little width.

Keep pans filled to the line with lids on, clean the coil regularly, and make sure the unit is not crowded against a wall or heat source.

A 27-inch table holds roughly 8 to 12 pans for trucks and small cafes, a 48-inch holds about 12 to 18 for most shops, and 60 to 72-inch models reach around 30 pans for high-volume lines.
