Overhead warmers keep plated food and held product hot in the seconds-to-minutes window between the line and the guest — at the expo pass, a carving station, a fry dump, or a buffet. They are short-term holders, not cookers and not a substitute for a steam table on a long buffet. The two families are bulb (heat lamp) warmers and strip warmers, and picking between them is the first decision.

In plain terms: bulb warmers look good and spotlight a dish, so they shine front-of-house and at carving stations. Strip warmers put out steadier, less-drying heat across a wider area, so they win for back-of-house staging and longer holds. Many lines use both.

Bulb type and color

If you go with a heat lamp, the bulb matters:

  • Clear bulbs throw crisp white light — best when you want food to look natural under the lamp.
  • Red / amber (infrared) bulbs give a warm glow, run a touch gentler, and hide some heat glare; common at buffets.
  • Shatter-resistant coated bulbs are worth it anywhere over open food for safety.

For strip warmers, the element type sets the feel of the heat: quartz heats fast for quick-serve lines, ceramic gives gentle even heat for delicate items, and metal-sheathed elements balance speed and durability.

Wattage and coverage

Wattage is roughly how much heat you get. Rules of thumb from typical product ranges:

  • Heat-lamp bulbs: commonly 250–375W each for carving and plating; higher-watt bulbs up to ~1000W for tougher holds.
  • Strip warmers: anywhere from ~250W up to several thousand watts depending on length; wider or double-stack rails and dense proteins need higher watt density.
  • Length: strip warmers come in standard 24, 36, 48, 60, and 72-inch lengths — measure the shelf or pass you need to cover and match it.

Warmers hold; they do not sanitize or reheat. Food must already be hot, and even under a lamp you should verify it stays at or above 140°F for anything held more than a few minutes. A lamp is best thought of as a bridge, not a holding cabinet.

Mounting and controls

  • Hanging / hardwired: permanent over a pass or buffet; clean look, needs an electrician.
  • Clamp or bracket-mount: attaches to a shelf or rail, movable, great for carving stations.
  • Countertop / freestanding: portable, plug-in, easy to reposition.

Look for a toggle or dimmer/infinite control so you can dial heat to the food, and confirm the mounting height — too close scorches, too far does nothing. Most bulbs want roughly a hand-span or two of clearance above the food.
